The most user friendly way to completely remove the Joomla Generator Meta Tag is to use the Joomla Plugin called ByeByeGenerator.

After installation enable ByeByeGenerator in the Plug-in Manager.

ByeByeGenerator will also remove the Joomla Robots Meta Tag if you want.
